The problem

Foodservice procurement is split between food broadliner, paper, and smallwares.

A typical restaurant operator runs Sysco or US Foods for food, a specialty paper / disposables distributor (Imperial Dade, Bunzl, regional jan-san) for paper and packaging, and a smallwares specialist (Mission Restaurant Supply, KaTom, WebstaurantStore) for kitchen equipment. Three vendor relationships and three reorder cycles for what is functionally one supply room.

Food broadliner economics distort the rest.

Sysco and US Foods both bundle paper, gloves, and chemicals into the food order at premium pricing. Operators pay for convenience. The actual best-priced jan-san and disposables live in specialty channels; few operators benchmark.

PFAS regulations are tightening fast.

New York, California, Washington, Maine, Minnesota have banned PFAS in food packaging. Connecticut and others following. Operators in those states cannot ship PFAS-coated paperboard. Most distributor portals do not flag this on the line.

Smallwares is one-off and overpaid.

New location open buys $15K to $40K of smallwares in one shot. WebstaurantStore retail. Mission Supply rep. Local restaurant supply company. Pricing varies 20-40% on the same Vollrath pan across these channels.

Glove allocation by use case.

Food-prep gloves vs. exam gloves are different specs. Allergen and protein concerns mean nitrile is the food-safe default; vinyl is short-duration acceptable. Most operators reorder "blue gloves" without re-specifying.

Quat sanitizers, chlorine sanitizers, peracetic acid (produce wash), three-compartment sink sanitizers, dish-machine detergent and rinse-aid (Ecolab, Diversey, Spartan). Test strips for sanitizer concentration. Hand soap and food-safe sanitizer dispenser programs.

Dispensers and FOH supply

PFAS-free packaging

NY, CA, WA, ME, MN ban PFAS in food packaging. We will only quote PFAS-free packaging for those ship-to addresses and surface the compliance status on the line. PFAS-free options: PLA-lined paperboard, sugarcane / bagasse, uncoated kraft for low-moisture, mineral-coated paper.

Compostable / BPI certified

BPI-certified PLA cups and clamshells, sugarcane / bagasse plates and bowls, wooden / bamboo cutlery, paper straws. Eco-Products, World Centric, Vegware, Stalk Market, Compostware.

Recycled-content paper

Post-consumer recycled (PCR) napkins, paper towels, kraft bags. FSC-certified paper goods. Useful for operators with sustainability mandates or LEED-pursuing buildings.

Reusable foodservice

Reusable to-go containers (PP-5 dishwasher safe), reusable utensils, reusable straws (stainless, silicone, glass), customer-return programs (DeliverZero, Reposit). For operators piloting reusable models.

Allergen-control consumables

Color-coded cutting boards (white, red, green, yellow, blue), color-coded gloves (different color per allergen station), allergen-control wipes, dedicated cooking utensils, gluten-free workstation supplies.
